Lately I have been into eating 0% greek yogurt with agave syrup on top to sweeten it up a tad rather than honey. It's delicious! So yesterday I was rooting through my cupboard just to see what I had in there and I came across shredded coconut. All of a sudden a light bulb went off in my head and I went back to my old job at Trufflehounds and remembered how wonderful the smell of toasted coconut was and how it always filled the shop with this amazing aroma. So...I toasted my own. This morning for breakfast I had my greek yogurt and then I sliced a banana and put the coconut on top. It was heaven on a plate.
